This is a vibrant green, delicious, fluffy pancake infused with matcha green tea flavor. You can eat this either as a dessert or breakfast. The matcha flavoring will add a fun Japanese flair. You will want to make sure to flip these earlier to prevent the green color from turning brown. Serve with coconut whipped cream, powdered sugar, and sprinkles. 

  • 1 cup all-purpose flour
  • 1 tablespoon green tea powder (matcha)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk 
  • 1 egg
  • 2 tablespoons olive oil
  • 2 teaspoons vanilla extract
  • ¼ cup white chocolate chips
  1. Whisk the flour, baking powder, and salt together in a bowl. Add in the matcha powder.
  2. Make a well in the center of the mixture. Add 1 cup of milk, 1 egg, olive oil, and vanilla extract. Whisk batter. Stir in chocolate chips. 
  3. Grease a small saucepan. Heat over medium-low heat. Add 3 spoonfuls of batter to the center of the pan and cook until small bubbles rise to the surface. This should take about 1 minute. Flip the pancake and cook until the edges are a light golden brown. This should also take about 1 minute. 
  4. Top with whipped cream or powdered sugar! Enjoy!!
